| 2 c | all purpose flour |
| 1 c | butter softened (no substituting) |
| 1/2 c | powdered sugar |
| FILLING | |
| 4 | eggs (slightly beaten) |
| 2 c | sugar |
| 4 Tbsp | flour |
| 6 Tbsp | lemon juice (i use bottled) |
| FROSTING | |
| 1/2 c | butter (softened) |
| 1 c | powdered sugar |
| 1 tsp | milk |
| 2 Tbsp | cold water |

Directions
MIX CRUST INGRED. WITH FORK AS YOU WOULD FOR A PIE CRUST. PAT INTO A 9X13 PAN WHICH HAS BEEN GREASED AND FLOURED. BAKE AT 350 DEGREES FOR 15 MINUTES.AS CRUST IS BAKING. MIX FILLING. AFTER CRUST HAS BAKED 15 MINUTES, POUR FILLING OVER CRUST AND CONTINUE BAKING FOR 25 MINUTES. COOL BARS COMPLETELYMAKE FROSTING BY BEATING BUTTER,POWDERED SUGAR AND MILK FOR 6 TO 8 MINUTES ON HIGH SPEED. THEN ADD 2 TBLSP. COLD WATER ONE AT A TIME. BEAT UNTIL SMOOTH. SPREAD OVER COOLED BARS.

teri you will LOVE these lemon bars!!!! so will the kids. I see your really getting hit with a blizzard. Don't know what the heck is going on with this weather!! kinda scary!!! we have a ton of snow up here in northern Minnesota!!! we won't see the grass till august if this keeps up!!haha. let me know how you like the bars!

I made these last night and I think they are really good but I think next time I will go with my instinct and substitute some of the water in the frosting with Lemon Extract. I think the frosting needs a little kick. Still, these are delicious and everyone at my house gave them the double thumbs up.
