2 c
all purpose flour
1/2 tsp
baking soda
1/2 tsp
1 Tbsp
lemon zest, grated
2 Tbsp
lemon juice, fresh
1 stick
unsalted butter
1 c
1 large
1 tsp
pure vanilla extract
lemon glaze


2 c
confectioners' sugar
2 Tbsp
finely grated lemon zest
1/3 c
fresh lemon juice
mix all together


1Preheat oven to 350 degrees. Spread cookies with Lemon Glaze and let set, about 1 hour.

2In a medium bowl, whisk together flour, baking soda, salt, and lemon zest.

3In a large bowl, using an electric mixer, beat butter and granulated sugar until light and fluffy. Add egg, vanilla, and lemon juice and beat until combined. With mixer on low, beat in flour mixture.

4Drop dough by heaping tablespoons, 1 inch apart, onto two baking sheets.

5Bake until edges are golden, 15 to 20 minutes, rotating
sheets halfway through. Let cool 2 minutes on sheets, then transfer cookies to a wire rack to cool completely.

6Spread cookies with Lemon Glaze and let set, about 1 hour.
