old fashioned rolled oats
sweetened condensed milk
Preheat oven to 350 degrees. Grease a 9x13 inch baking dish
In a medium bowl, mix together flour, oats, salt and baking soda. Add sugars and mix until there are no lumps of sugar.
Add vanilla to melted butter. Stir butter into dry ingredients. Press about half of the mixture into the baking dish. Bake for 15 minutes.
While the crust is baking, Whisk together sweetened condensed milk, lemon juice, egg yolks, and lemon extract until well blended.
Pour mixture over the crust. Sprinkle evenly with other half of the crumb mixture. Return to oven. Bake for 25 minutes.
Remove from oven and allow to cool at room temperature. Once cool, cover and refriderate for at least 30 minutes. Remove and cut into squares.
