Lemon Cookies with a Lemon Glaze

fresh grated lemon rind
rind and juice of a lemon
drops of boiling water to thin
In a bowl cream together shortening and sugar.
Add egg and beat until fluffy.
Add lemon juice and grated rind.
In a separate bowl, sift flour, baking powder and baking soda.
Add above mixture with egg mixture,alternating with buttermilk.
Place on greased cookie sheet and press slightly.
Bake at 350 on a for 12-15 minutes or until slightly golden.
Remove and let cool completely.
In a bowl combine lemon juice, lemon rind, melted butter, evaporated milk, lemon extract and powder sugar and mix to form a glaze.
