An awesome cookie, crispy on the outside and chewy on the inside. The lemon flavor adds a new twist to the popular Snickerdoodles.

Ingredients

  • 2 1/2 cups flour
  • 1 1/2 cups sugar
  • 3/4 cup coconut
  • 1 cup butter, softened
  • 2 - eggs
  • 1 1/2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon grated lemon rind

How To Make lemon coconut snickerdoodles

  • Step 1
    Combine all ingredients. Beat at low speed until well mixed, 2 to 4 minutes.
  • Step 2
    Drop by rounded teaspoonfuls of dough onto ungreased cookie sheets.
  • Step 3
    Bake at 400 degrees for 7 to 10 minutes or until edges are lightly browned.
