Ingredients

1 c soft butter (2 sticks)
2 c sugar
2 tsp vanilla extract
1 15 oz container of ricotta cheese
4 c all purpose flour
1 tsp salt
1 tsp baking soda
1 container of vanilla frosting
christmas sprinkles
3 eggs

paula's Notes:

I can't even remember where I learned this recipe, I have been making them for 20 + years, every christmas, my family loves them.
Using ricotta in the batter makes them so soft and almost cake like..

 

Directions

Combine : butter, sugar, eggs , vanilla then add ricotta and mix well.

Add the dry ingredients flour, salt, baking soda.
Mix well and drop by tablespoons onto a cookie sheet lined with parchment paper, or a greased cookie sheet.

Bake 350* 10 minutes or so, just barely lt golden on the edges..remove to cooling rack.. Cool completely before putting vanilla frosting on top, then add sprinkles, if you have any left store in fridge...

I make these every christmas we call them ricotta cookies my mom made these by the dozen great cookie

What a great addition to my Christmas cookie collection. They are just scrumptious! So soft, light & airy with a great sugar cookie taste. I LOVE these!
These would be good with either lemon or orange frosting. Maybe next time!

One piece of advice. Frost the cookies righto out of the oven when they are still hot. The frosting will soften & slide over the cookie & make a glaze. It looks more like the posted picture. At first I was frosting mine after cooled as the recipe suggests. Couldn't undeerstand why they didn't look like the pic. Then I tried frosting them while hot & YES! they look as pretty as the picture! And yes, the glaze hardens which makes the cookie easier to package for gifts & such. The frosting firms up but takes longer. I had to let mine sit out overnight to firm up enough to put in a cookie tin.
