Ingredients

1 c flour
2/3 c sugar
1 1/3 c hazelnut flour/meal
1 1/2 tsp baking powder
1/4 tsp salt
nutella as needed
1 c butter

Best cookie ever. Nutella is amazing and when you sandwich it between two Hazelnut shortbread cookies, you can't deny the indulgence. Enjoy!

 

Directions

Combine butter and sugar

Add in hazelnut flour (try Bob's Red Mill -- www.bobsredmill.com)

Mix flour, baking powder and salt

Mix in flour mixture with butter, sugar and hazelnut mixture

form into small balls and flatten slightly on baking sheet

bake at 375 for 10-ish minutes until slightly brown on edge

Cool on rack and then spread one side with Nutella and sandwich with another

How much butter? Is the butter melted? Sounds like it could be close to the Pepperidge Farm cookies my son LOVES. Thanks so much.

Sorry, I left out the butter. It should be room temperature. Enjoy! Very much like the pepperidge farm cookies except nutella instead of plan chocolate or peppermint.

YUM YUM YUM!!!! Hazelnuts are a favorite of mine and Nutella is strictly to die for. I got started on Nutella when my sister had a foreign exchange student from Italy and he couldn't live without it. LOL He used to have his parents ship it to him in Montana. This was over 20 years ago. I have a Nutella cheesecake recipe that will (as my mother used to say: "Lay you in the Lilies") I will have to post it if you love Nutella like I do. Love Bobs Red Mill too. He has so many different products for baking.
