Ingredients

1 c
butter, unsalted
1 c
sugar
1/2 tsp
pure vanilla extract
1/2 tsp
almond extract
2 large
eggs, separated
3/4 c
blanched almonds, chopped
2 2/3 c
all purpose flour
1/4 tsp
kosher salt
48
whole unblanched almonds

Directions Step-By-Step

Preheat oven to 350-degrees.

Cream butter and sugar until light and fluffy. Beat in extracts and egg yolks.

Add nuts, flour and salt; mix well.

Roll into balls, dip into unbeaten egg whites (this will provide the glaze). Place on a greased cookie sheet 2-inches apart. Place a whole almond on each cookie and push down to flatten.

Bake for about 10 minutes. Makes about 48 cookies. Dust with powdered sugar before serving.
