Kim's Story

Wow, this is one of my favorite recipes that I have found so far. It is so beautiful and yet super easy to make too. What a wonderful dessert to take to a holiday party at Christmas time or even at Thanksgiving. ----- A cross between a cream pie and cheesecake. Even those that are not a fan of eggnog will enjoy this one!

I hope you enjoy.

Recipe is from Taste of Home.

Ingredients

1
can (13 1/2 oz.) pirouette cookies
1/2 c
graham cracker crumbs
1/4 c
butter, melted

2 pkg
(8 oz. each) cream cheese, softened
2 c
cold eggnog
1 1/3 c
whole milk
2 pkg
(3.4 oz. each) instant vanilla pudding mix
1/2 tsp
rum extract
1/8 tsp
ground nutmeg
1 c
heavy whipping cream

Directions Step-By-Step

1
Cut each cookie into two 2-1/2 or 3 inch sections; set aside. Crush remaining 1-inch pieces. In a small bowl, combine the cookie crumbs, cracker crumbs and butter.
2
Press onto the bottom of a greased 9-in. spring-form pan.
3
In a large bowl, beat the cream cheese until smooth. Beat in the eggnog, milk, dry pudding mixes, extract and nutmeg until smooth. Whip cream until stiff peaks form. Fold whipped cream into pudding mixture. Spoon over crust. Cover and refrigerate for 4-6 hours or overnight. (Make sure you use a VERY LARGE bowl.)
4
(Can do this 1/2 to 1 hr before serving.) Just before serving, remove sides of pan. Arrange reserved cookies around dessert and press gently into sides.
5
Refrigerate leftovers. Yield: 12 servings.

----Do not use reduced fat eggnog in this recipe.
