I discovered this recipe in 1980, the same year that Pop started growing his beard. I remember making them for the first time when this major change came to my sweetheart. The recipe is on page 105 of the 1980 Southern Living Cookbook. It's one of Pop's favorite cookies!

Ingredients For easy oatmeal cookies

  • 1 1/4 c
    sifted all-purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 1 c
    solid crisco
  • 1 c
    brown sugar, firmly packed
  • 1 c
    granulated sugar
  • 2
    eggs
  • 1/2 tsp
    vanilla extract
  • 3 c
    quick-cooking oats
  • 1/2 c
    chopped pecans

How To Make easy oatmeal cookies

    Sift together flour, soda, salt, and cinnamon. Set aside.

    Cream Crisco, both sugars, eggs, and vanilla.

    Add flour mixture to shortening mixture and mix well.

    Add oats, then pecans.

    Roll into small balls (about the size of a walnut) and place 1 inch apart on ungreased cookie sheet. Bake at 350 for 12 to 15 minutes. Cool on wire racks.
