  Meanwhile, gently spread pistachio ice cream over each of 2 cookies & strawberry ice cream over 2 other cookies.

  ASSEMBLY: For each sandwich...stack a pistachio cookie with a strawberry cookie & top with chocolate dipped cookie & freeze until firm, about 3 hours.
