Coconut Mud Bars

This is one of my personal favorites, a rainy day an old movie and a bucket full of mud bars.

Ingredients

1 1/3 c
all purpose flour
1 pinch
salt
1/2 c
unsalted butter
1/2 tsp
baking powder
1/2 c
dark brown sugar
GANACHE
10 oz
semi-sweet chocolate chips
3/4 c
heavy cream
TOPPING
4 Tbsp
butter, unsalted
2 tsp
vanilla extract
1 1/2 c
chopped pecans
1/2 c
sugar
1/4 tsp
coconut extract
1 1/2 c
coconut, shredded

Directions

For the Crust: Combine flour, baking powder, salt, & brown sugar. Cut in butter. Press in bottom of greased 9x13 pan.
Bake 10 minutes at 350*. cool

Place chocolate in Medium bowl. Bring cream to simmer. pour over chocolate. Let set 5 minutes. Stir until smooth. pour over crust. Refrigerate 15 minutes to set Ganache.

Cream butter, sugar, vanilla & coconut extract. Beat in eggs. Stir in coconut and pecansDrop toppings evenly over ganache. Spread gently. Bake, 25-30 minutes. cool. Cut into bars ans enjoy.
