Ingredients

2
egg whites
1/4 tsp
cream of tartar
1 dash(es)
salt
1/2 c
sugar
2 tsp
ground cinnamon
1 tsp
vanilla extract
1/2 tsp
almond extract

Step-By-Step

1In medium bowl, combine egg whites with cream of tartar and salt; beat with electric mixer until soft peaks form. Gradually beat in sugar until stiff peaks form.

Fold in cinnamon, vanilla and almond extract. Drop by tablespoonfuls onto greased baking sheet.
2Bake at 300 F. for 30 minutes. Turn off heat and leave cookies in oven, with door closed, until cooled. Store in airtight container to retain crispness for up to 1 week.
3Variation:

Stir in 1 cup semi-sweet chocolate chips, chopped pecans or chopped walnuts if desired.
