My friend's mother- Carol- made these for my bridal shower and since then I make them all the time. They are so soft and tasty. They freeze well too. I tend to make them bite-sized and so I usually make with mini chocolate chips- either milk or semi-sweet. The original recipe called for regular-sized semi-sweet chocolate chips, which are still delicious.
Combine flour and pudding mix in small bowl, set aside. In a separate large mixing bowl, beat butter on high speed for 30 seconds. Beat in brown sugar and baking soda until well combined. Beat in egg and egg white. Gradually blend in flour mixture. Stir in chocolate morsels.
Drop dough by rounded teaspoon 2 inches apart onto ungreased baking sheets. Bake 10-12 minutes or until set. Cool on baking sheets for 2-3 minutes. Remove cookies and cool completely on wire rack.
