When a friend was describing what the perfect cookie would be if it existed, I decided to create a recipe to give her as a Christmas present. The following recipe is what I came up with and was a huge hit with her and her family.

What a great surprise when you bite into these scrumptious cookies. The combination of chocolate chips, peanut butter, caramel, and pecan makes a delicious cookie. They're a dense chocolate cookie with a prevalent peanut butter flavor. The chocolate caramel candy in the middle is gooey and delicious.

Ingredients For chocolate chip peanut butter caramel pecan cookies

  • 1/2 c
    butter, softened
  • 1 c
    peanut butter
  • 1 c
    plus 1 tsp granulated sugar, divided
  • 1 c
    light brown sugar, tightly packed
  • 2 lg
    eggs
  • 2 tsp
    vanilla extract
  • 2 1/4 c
    all-purpose flour
  • 3/4 c
    baking cocoa
  • 1 tsp
    baking soda
  • 1 c
    chopped pecans, divided
  • 1 c
    semi-sweet mini chocloate chips
  • 1 pkg
    Rolo candies (13 oz)

How To Make chocolate chip peanut butter caramel pecan cookies

  • Blend peanut butter, butter, sugar, and brown sugar.

    Preheat over to 375 degrees F. In a large mixing bowl, cream butter, peanut butter, 1 cup sugar, and brown sugar until well blended.
  • Add eggs and vanilla extract.

    Beat in eggs and vanilla.
  • Combine cocoa, baking soda, and flour in a bowl.

    Combine flour, cocoa, and baking soda in a separate bowl.
  • Add flour mixture to the creamed mixture.

    Gradually add to creamed mixture just until combined.
  • Stir in chocolate chips and pecans.

    Stir in 1/2 cup pecans and mini chocolate chips.
  • Wrap cookie dough around a Rolo candy.

    Shape dough by tablespoonfuls around each Rolo.
  • Add chopped pecans and sugar to a bowl. Roll balls of dough in the pecan mixture.

    In a small bowl, combine the remaining 1/2 cup of pecans and 1 tsp of sugar. Dip each cookie halfway into the pecan mixture.
  • Place balls of dough on a baking sheet.

    Place cookie nut side up on ungreased baking sheets. Slightly flatten the cookies.
  • Bake the cookies.

    Bake for 7-10 minutes or until top is slightly cracked.
  • Cool on a wire rack.

    Cool for 3 minutes. Remove to a wire rack to cool completely.
