Chocolate Chip Peanut Butter Caramel Pecan Cookies

When a friend was describing what the perfect cookie would be if it existed, I decided to create a recipe to give her as a Christmas present. The following recipe is what I came up with and was a huge hit with her and her family.

Blue Ribbon Recipe

Whoa...what an ingredient combo! What a great surprise when you bite into the middle of a scrumptious cookie and find even more scrumptious caramel!

Ingredients

1/2 c
butter, softened
1 c
plus 1 tsp sugar, divided
1 c
light brown sugar, tightly packed

eggs
2 tsp
vanilla extract
2 1/4 c
all purpose flour
3/4 c
baking cocoa
1 tsp
baking soda
1 c
chopped pecans, divided by 1/2 cup
1 pkg
13 oz package rolo candies
1 c
peanut butter
1/2 c
semi-sweet mini chocloate chips

Directions Step-By-Step

Preheat over to 375 degrees.

In large mixing bowl, cream butter, peanut butter, 1 cup sugar and brown sugar until well blended. Beat in eggs and vanilla. Combine flour, cocoa and baking soda in a separate bowl; gradually add to creamed mixture just until combined. Stir in 1/2 cup pecans and mini chocolate chips.

Shape dough by tablespoonfuls around each Rolo. In a small bowl, combine remaining pecans and sugar; dip each cookie halfway into pecan mixture

Place cookie nut side up on ungreased baking sheets. Bake for 7-10 minutes or until top is slightly cracked. Cool for 3 minutes; remove to wire racks to cool completely.

I just made these but changed it up a little. First I omitted the semi-sweet chocolate chips and instead of Rolo candies I cut caramels in half and wrapped the cookie dough around those. For the toppings instead of pecans I chopped up unsalted peanuts and used about 1/4 tsp crushed pink himalayan salt instead of the sugar. I made my own semi-sweet chocolate "kisses" and for half of the batch of cookies I topped them with the peanuts/salt mixture and the other half with a chocolate kiss. I baked as usual. Of course I had to try one and I have to say they were fantastic! These definitely will be put in my favorites recipe box! I am taking them to a cookie exchange party tonight and I'm sure they'll be a hit! Thanks for the recipe!!

Congrats on your blue ribbon, Cathi. I made these cookies this past weekend, and other than leaving out the mini chocolate chips, I followed the recipe as written. I used a tablespoon to scoop the dough and wrap around the Rollo. I did not, however, get 2 dozen cookies -- I got 64! In fact, the last 9 cookies did not have a Rollo, as I ran out. No complaints -- they were very tasty and they went fast, so I am glad to have had the extra. Just a warning, plan on a longer prep time as the recipe makes more than indicated. Happy baking.
