Chewy Raisin Walnut Shortbread Bars

I don't remember where I got this recipe, but think it was in one of the old cookbooks I had. I like it because it's chewy and with the ingredients that are in it gives it a great flavor.

Ingredients

1 1/4 c
all purpose flour
1/2 c
sugar
1/2 c
butter
2
eggs
1/2 c
brown sugar, firmly packed
1 tsp
vanilla extract
1/8 tsp
soda
1 c
walnuts--chopped
1 c
raisins
1/2 c
coconut--flaked

Directions Step-By-Step

Heat oven to 350* Lightly grease 8" pan

Combine flour and sugar. Cut in butter until mixture resembles fine meal. Press into greased pan. Bake 20 min or just until edges lightly golden.

Meanwhile, combine eggs, brown sugar and vanilla; beat well. Stir in soda, walnuts, raisins and coconut. Spoon over hot crust; spread to cover evenly. Return to oven; bake an additional 20-25 minutes or until top is set. Cool completely,
Cut into 16 bars.
