sandra's Story

Believe it or not, one day my child asked if all brownies were chocolate. No, I told him, some are made with other things. Then I found this recipe for Blonde Brownies. We tried it and loved it. I make it almost as much as the chocolate kind. It goes well at church suppers and potlucks.

2 1/2 c
light brown sugar
2/3 c
vegetable oil
eggs, lightly beaten
2 tsp
real vanilla
2 c
all purpose flour
1 tsp
baking powder
1 tsp
1/4 tsp
baking soda
12-ounce package chocolate chips (optional)

Directions Step-By-Step

Spray 13"x9" pan with non-fat cooking spray.
Mix sugar and oil. Add eggs and vanilla. Sift all dry ingredients together and add to mixture and mix well.
Pour into pan. Spread and smooth batter. If desired, sprinkle chocolate chips on top or use other flavored chips.
Bake at 350. Do not overbake. Check at 20 min. Toothpick should come out clean. Try to wait until completely cool before eating. We never can wait that long if brownies are for having at home!

Sandra, I made your recipe with the exception that I used "Jiffy" baking mix in place of the flour, salt, etc and they turned out so soft and chewy.. my husband loved them. With my bad back and hip I have had to find ways to take short cuts with my baking and cooking these days but I got to tell you these were delicious ( Oh, i used the brown sugar from Splenda in place of reg brown sugar for health reasons and hubby couldn't tell the difference! LOL I will be making these often, thanks
