Ingredients For berry citrus poppy seed bars

  • 1
    pack of neutral plain cookies like maria cookies--about 2 cups
  • 6 oz
    cream cheese
  • 1/3 c
    sugar
  • zest and juice of 1 lemon
  • zest of 1 clementine
  • zest and juice of ½ an orange
  • 1
    egg
  • 2 c
    of blueberries (fresh or frozen, if frozen do not thaw)
  • 1 c
    raspberries (fresh or frozen, if frozen do not thaw)
  • 1 Tbsp
    poppyseed
  • confectioner's sugar for dusting (optional)

How To Make berry citrus poppy seed bars

    Preheat the oven to 400 degrees F. Take a 9 inch square spring form pan and line it the bottom with parchment paper. Crumble the cookies and press them at the bottom of the pan, pressing them finely so as not to seep any filling out.

    In a small bowl mix the cream cheese, citrus zests and juices, sugar, poppyseed and egg. Pour the cream cheese filling over the cookie layer and spread it lightly being careful not to mix the layers. Top with the berries and extra cookie crumbles if desired.

    Bake for about 30 minutes until the filling has set and edges are golden. Cool the pan on the counter and in the fridge for 2 hours before cutting, or 30 minutes in the freezer. Cut them and dust with confectioner’s sugar if desired.
