Ingredients

2 c all purpose flour
2 c old fashioned oats
2 c granulated sugar
1 c coconut, flaked
1 c unsalted butter
2 Tbsp lyle's golden syrup (worth finding & purchasing)
3/4 tsp baking soda
1/4 c boiling water

Roz's Notes:

This cookie was made famous during World War II when care packages for the Australia New Zealand Army Corp (ANZAC) were sent to the troops.

The shelf life is longer due to not having eggs and it's worth it to either purchase the Lyle's Golden Syrup either at your grocery or online! It DOES make a difference (because I've tried with a substitute and the real thing)!

 

Directions

Preheat oven to 350 degrees. Line cookie sheets with parchment paper and set aside.

In a large bowl combine flour, oats, sugar and coconut. Set aside.

In a small saucepan over medium heat, melt butter with Lyle's Golden Syrup. Dissolve baking soda in boiling water and add to butter mixture. Stir to combine. (Be careful...if butter mixture is hot the addition of the baking soda/boiling water will bubble up considerably)

Add butter mixture to dry ingredients and stir well to combine. (if a bit crumbly, I've added a sprinkling of hot water to moisten)

Drop (or scoop) onto prepared baking sheets about 2" apart (making sure to scoop and pack lightly so your dough doesn't crumble). Flatten cookies slightly with the heel of your hand.

Bake until golden brown and firm but not hard, about 15 minutes (check after 10). Transfer to wire racks to cool completely.

Yield: Approximately 3-4 dozen

Where can you find online?? If it is something that is used often, I'm sure I'll have trouble getting it around here!!!

It's a product used in the UK and Australia mostly -- I've not been able to find it here in Atlanta, Georgia so I ordered if online through KingArthurFlour.com. Since you only use 2 Tablespoons in this recipe - a bottle would last a while.

I LOVE these. I buy them at the Australian Bakery on the Marietta Square. I wonder if they carry the syrup? It's been awhile since I've been in there.

@ Billie -- King Arthur flour is the only flour I use...period!

I actually live in Smyrna now, just outside Vinings. I lived in Marietta for years, off and on. My ex's job boomeranged us to the Atlanta area 3 times in 24 years. I have lived in Cobb for all bur 6 of those when we were out of state.

It would be fun to meet up for lunch one Saturday.

Golden Syrup or Karo should be great substitute. Found next to pancake syrup.

Kathy - I've tried the Golden Syrup (still have it in my cabinet) and it's not the same -- it'll do but the taste isn't the same.
