Ingredients

3 oz
sugar

egg yolks

whole eggs
12 oz
melted chocolate
3/4 oz
gelatin
3 oz
cold water
1 qt
heavy cream
alcohol of choice

Directions Step-By-Step

Whip cold cream to soft peaks

Heat eggs, sugar and yolks over a oduble boiler, careful not to cook the eggs. Just disolve the sugar.

Stain eggs and whip to 2/3 in volume.

Bloom gelatin in the cold water.

Melt the chocolate.

Melt the gelatin.

Fold gelatin into the eggs.

Mix chocolate into the eggs.

Fold cream into the eggs.

Add liquor (optional)
