Ingredients

3 oz
sugar
2
egg yolks
4
whole eggs
12 oz
melted chocolate
3/4 oz
gelatin
3 oz
cold water
1 qt
heavy cream
alcohol of choice

Step-By-Step

1Whip cold cream to soft peaks

2Heat eggs, sugar and yolks over a oduble boiler, careful not to cook the eggs. Just disolve the sugar.

3Stain eggs and whip to 2/3 in volume.

4Bloom gelatin in the cold water.

5Melt the chocolate.

6Melt the gelatin.

7Fold gelatin into the eggs.

8Mix chocolate into the eggs.

9Fold cream into the eggs.

10Add liquor (optional)
