I just discovered this recipe from the blog The Girl Who Ate Everything. On, my! Tastes like a big peanut butter cup! Peanut butter cups are my husband's favorite and he absolutely loved these. The coconut is optional- I left it out because I wanted it to be as close to a real peanut butter cup as possible.
plain yellow cake mix (18.25 oz size)
creamy peanut butter
sweetened condensed milk (14 oz)
semi-sweet chocolate chips (12 oz)
1Preheat oven to 325. Combine the cake mix, melted butter, peanut butter, and eggs in a large bowl. Press into a 13 x 9 pan, reserving about 1.5 cups of the mixture to crumble later on top.
2In a small pot, melt the chocolate chips, sweetened condensed milk, and the 2 tbsp butter. Remove from heat and stir in the vanilla and coconut, if you are using it.
3Spread the chocolate mixture on top of the cake mixture in the pan. Crumble the remaining cake mix on top.
4Bake for 20-25 minutes. Then try not to eat the entire pan.
