2Prepare a 13"x9" pan with parchment paper for cooking.
3In a large mixing bowl, combine Almond meal, Sugar and Cocoa Powder. After mixing thoroughly, add Salt, Baking Powder and Xanthan Gum. Mix thoroughly.
4Make a well in the center of the dry ingredients and add Oil, Vanilla Extract and Eggs. Mix until batter is thick and completely combined.
5Pour batter into prepared baking pan and smooth with rubber spatula. Tap the pan on a counter top to get rid of any bubbles in the batter and to make the batter even across the whole pan.
6Place on the middle rack of the oven and cook for 20-25 mins or until the edges pull away from the sides of the parchment paper.
