1 1/2 c flour
1/2 tsp pumpkin pie spices
1/2 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 eggs
1 c sugar
1/2 c canola oil
1 1/2 c fresh pumpkin puree
2 1/2 c chocolate chips or more
cinnamon sugar

Judy's Notes:

I found some pumpkin puree I made last year when we were carving pumpkins. I removed them from the freezer allowed to defrost, and whipped these up. My husband ate 2 saying they were so good!

 

Directions

pre heat oven 400 degrees, spray with canola oil muffin tin or line with cupcake liners

In a larger bowl whisk until smooth eggs, oil, pumpkin purée and sugar
This should make a dozen however mine made 11 guess I like huge muffins!

In a smaller bowl mix together flour, baking soda, baking powder, cinnamon, salt & pumpkin pie spice.

Mix the dry ingredients with the wet ingredients

Stir in the chocolate chips,

Pour in the muffin tin, should make a dozen, bake for 18-20 mins or until done.

remove from the pan and sprinkle with cinnamon sugar while they are still warm.
