Chocolate Spice Zucchini Bread

A great recipe to use up extra zucchini, this yummy moist chocolate quick bread has a hint of pumpkin pie spice to add pizzazz. It makes a nice gift for those special people in your life, like teachers and neighbors, during the holidays.

Ingredients

eggs
1 c
oil
2 c
brown sugar, firmly packed
1 tsp
vanilla
3 c
grated zucchini
2
chocolate, unsweetened squares, melted
4 c
all purpose flour
1 tsp
salt
1 tsp
baking soda
1/4 tsp
baking powder
1 tsp
cinnamon
1 tsp
pumpkin pie spices
1/2 c
walnuts, chopped

Step-By-Step

1Grease and flour (2) 8x4 inch loaf pans.
Beat eggs well; add oil and brown sugar, mixing thoroughly. Add vanilla, zucchini, and melted chocolate and beat well.

2Mix together flour, salt, baking soda, baking powder, and spices. Add to zucchini mixture by spoonfuls, mixing well after each addition. Stir in nuts by hand until combined.

3Bake in loaf pans at 350 for 40-60 minutes. Cool in pans until loaves can be removed (10-15 min), then cool on rack.
