Chocolate Fridge Cake

My daughter and I put this together from a mommy and daughter cookbook.

Ingredients

8 oz
graham crackers, crushed
5 oz
milk chocolate
5 oz
semisweet chocolate
1/2 c
golden syrup or light corn syrup
1 stick
unsalted butter
1/2 c
raisins (optional)
3/4 c
dried apricots (or other dried fruit) optional
1/2 c
chopped pecans (optional)

Step-By-Step

1Use plastic wrap to line an 8-in square pan. Leave extra plastic wrap hanging over the sides.
2Break the crackers into pieces with a rolling pin (if you have actual crackers and not crushed).
3Melt chocolate, butter, and syrup in a heatproof bowl set over a pan of simmering water on the stove. Stir until melted.
4Remove the bowl from the heat and stir in the broken crackers, apricots, raisins and pecans.
5Allow to cool then put the chocolate mixture in the refrigerator for 1 to 2 hours to set.
6Turn out the cake and peel off the plastic wrap. Cut the cake into 12 squares and enjoy!
