Chocolate Chip Oatmeal Muffins

Mary's Story

I eat homemade muffins every morning, so I have experimented with many recipes. These are simply the best!!! They are so moist and come out great every time.


1-1/2 c
boiling water
1 c
quick cooking oats
1/2 c
butter, softened

all purpose flour
1 tsp
baking soda
3/4 tsp
1 Tbsp
1/2 c
semi-sweet chocolate chips

Directions Step-By-Step

Preheat oven to 350 degrees. If not using muffin papers, grease and flour muffin tin.
Mix boiling water, oatmeal and butter....let stand 10 minutes. Add white sugar, brown sugar and eggs....beat well.
In separate bowl, whisk together four, baking soda, salt and cocoa.
Mix wet ingredients with dry until well not overmix. Pour into prepared muffin tins...or, I like to use paper muffin cups in the tins. Evenly distribute the chocolate chips over the muffins. I always bake all my muffins for 20 minutes and add minutes as needed as to not overbake.
filling the muffin cups 3/4 full, I get 18 regular muffins or 9 when using the jumbo muffin tins. These freeze wonderfully.
