Ingredients
| 1-1/2 c | boiling water |
| 1 c | quick cooking oats |
| 1/2 c | butter, softened |
| 3/4 c | white sugar |
| 3/4 c | brown sugar |
| 2 | eggs |
| 1-1/2 c | all purpose flour |
| 1 tsp | baking soda |
| 3/4 tsp | salt |
| 1 Tbsp | cocoa |
| 1/2 c | semi-sweet chocolate chips |

Directions
Preheat oven to 350 degrees. If not using muffin papers, grease and flour muffin tin.Mix boiling water, oatmeal and butter....let stand 10 minutes. Add white sugar, brown sugar and eggs....beat well.In separate bowl, whisk together four, baking soda, salt and cocoa.Mix wet ingredients with dry until well blended...do not overmix. Pour into prepared muffin tins...or, I like to use paper muffin cups in the tins. Evenly distribute the chocolate chips over the muffins. I always bake all my muffins for 20 minutes and add minutes as needed as to not overbake.filling the muffin cups 3/4 full, I get 18 regular muffins or 9 when using the jumbo muffin tins. These freeze wonderfully.
