everybody's favorite. especially during the holidays. i also do mint cheesecakes with choc. the fun thing about cheesecake is you can change it and play around with it for any holiday. its one of my favorite desserts to make
1preheat oven to 300 degrees. whip cream cheese with 1c sugar until smooth. add eggs, vanilla and almond extract. mix at low speed for 2 min. avoid air bubbles.
2mix graham cracker crumbs, 1/4c of sugar melted butter together with a fork. mix well. press into cheesecake pan. i dont just do the bottom i like to do the sides to. if i have to i make another batch of the crust. thats just me.
3pour cheesecake mixture into crust adn bake for 40-60 minutes or until firm. cool for 30 minutes. then, if you like add toppings. i love it topped with cherries but it depends on how you want to flavor the cheesecake.
