- 1 medium potato
- 2 pounds powdered sugar
- 1 small jar peanut butter
1select a medium size potato .. peel and cook as if you were going to make mashed potatoes .. drain water ..
2mash potato with fork until completely mashed .. ( I do the mashing in the pan I cooked the potato in) When mashed add a small amount at a time of powdered sugar and mix well .. continue adding sugar until a soft dough forms (the amount of sugar will vary according to the size of your potato ...
3To help with clean up .. lay out waxed paper and sprinkle a little powdered sugar around .. turn dough onto paper and roll out as you would a pie crust .. I usually roll to about 1/4 inch thick .. again .. it is how you like it.
4Once rolled .. spread dough with peanut butter and cover totally .. roll dough up as you would a jelly roll .. Chill for about an hour .. slice to desired thickness and enjoy
