Pecan Chocolate Truffles

- 12 ounce semi-sweet chocolate chips
- 1 tsp
- pure vanilla extract
- 2 tsp
- corn syrup, light
- 1 c
- heavy cream
- 1 c
- pecans/chopped fine.
1In a medium mixing bowl,combine the chocolate chips,vanilla extract,and corn syrup.
2Bring the heavy cream to a boil and pour over the chocolate mixture.
3using a whisk,stir together until the cream and chocolate combine to form a smooth mixture.
4Allow the mixture to cool in the refrigerator for at least 3 hours.
5Using a melon baller,form the chocolate into 1 inch balls.
Roll them in the chopped pecans.
6CHILL in refrigerator for at least 30 minutes before serving.
