Peanut Butter Pumpkin Fudge

- 4 c
- vanilla or white chocolate chips
- 1/2 c
- peanut butter
- 2/3 c
- pumpkin purée, not pumpkin pie mix
- 2 tsp
- pumpkin pie spice
- 2 tsp
- vanilla extract
1Line an 8X8 pan with foil or parchment and spray with cooking spray. Gather all your ingredients, this goes fast once you start it. If you have made fudge you know this, if you haven't, see above lol
2Place white chocolate chips and peanut butter in a microwave safe bowl. Heat in microwave at 50% power for 1min. Stir and place back in microwave at 50% power for 30 second at a time till, stirring between each till melted and smooth. You can do this on the stove, but why?
3Once the chocolate and oeanut butter have melted and are smooth immediately stir in pumpkin purée, spice and vanilla. Pour into prepared pan and let cool to room temp in the counter, uncovered. Chill until set, and cut into squares, circles, stars, or whatever shape you want your fudge! Use small cookie cutters!!! Hey it's your fudge, cut it your way.
