THIS IS ANOTHER FUDGE THAT I INCLUDE IN MY CHRISTMAS GIFT TINS. VERY GOOD! I GET REQUEST AFTER REQUEST FOR MY RECIPE.

Ingredients

1/4 c
butter
2 1/2 c
sugar
2/3 c
evaporated milk
12 oz
white chocolate chips
2 c
miniature marshmallows
1/3 c
key-lime juice
1/2 c
macadamia nuts (coarsley chopped)
1/4 tsp
rum extract
1 tsp
lemon extract

Step-By-Step

1LINE A 9X9 PAN WITH FOIL. SET ASIDE.
2PLACE WHITE CHOCOLATE, AND EXTRACTS INTO A 3 QUART SAUCEPAN AND SET ASIDE.
3SET BUTTER ASIDE TO WARM. HEAT MILK AT MEDIUM HEAT UNTIL WARM, THEN ADD SUGAR. BRING TO A ROLLING BOIL OVER MEDIUM-HIGH HEAT, STIRRING CONSTANTLY WITH A WOODEN SPOON.
4ADD MARSHMALLOWS AND BUTTER, MIX UNTIL CREAMY. ADD KEY-LIME JUICE AND BRING BACK TO A BOIL STIRRING CONSTANTLY FOR 5 MINUTES. START TIME WHEN BOIL BEGINS. THE MIXTURE WILL BEGIN TO TURN A LITTLE BROWN DURING BOIL, IF YOU GET BROWN FLAKES IN MIXTURE REMOVE FROM HEAT AND LOWER TO A MEDIUM HEAT, AND CONTINUE TO STIR.
5REMOVE FROM HEAT AND POUR HOT MIXTURE OVER THE CHOCOLATE WITHOUT SCRAPING THE SIDES OF THE HOT SAUCEPAN.MIX UNTIL CHIPS ARE MELTED, THEN STIR IN NUTS. POUR INTO PREPARED PAN.
6COOL COMPLETLY AT ROOM TEMPERATURE. REMOVE FROM PAN, REMOVE FOIL, CUT INTO SQUARES
