Easy Caramels

I was given this recipe from a coworker who told me they were the best caramels ever and were so easy to make. She was right! They have now become a holiday staple when baking because of their delicious butter flavor and melt-in-your-mouth texture!

Tip: I have had the best results when using name brand ingredients as listed.

1 c
butter, room temperature
2 1/4 c
brown sugar
1 c
light karo syrup
1 can(s)
eagle brand sweetened condensed milk
2 tsp
vanilla extract


Cover 9x13 inch pan with parchment paper and set aside
In a large microwave safe bowl, combine butter, sugar, karo syrup, sweetened condensed milk, and salt. Mix just until combined.
Microwave on high as follows:
4 minutes then stir
4 minutes then stir
4 minutes then stir
4 minutes then stir
Add 2 tsp vanilla extract. Stir
Pour mixture into prepared 9x13 and let cool completely. When cooled, cut into pieces and wrap individually with wax paper or saran wrap.

    Really??? This really works in the microwave??? CRAZY! If so, sures beats standing over the stove stirring for an hour or so......
    Gonna have to try!

    I kept the wrapped caramels in a cookie jar for about a week before we finished them. They still stayed soft as long as they were wrapped tightly. Wendy-I was surprised by the microwave method as well, but I will never go back to the stove method now!

    You forgot the warning that you need to have lots of extra spoons so you can test the mixture inbetween each 4 minutes of microwaving or was that just me???? Wow easy and very yummy thanks for the post
