Very smooth and silky fudge. I like to make this recipe and my other Bailey's Irish Cream fudge and give as gifts because they are both wonderful flavors. All my friends love love love this fudge!

Blue Ribbon Recipe

Notes from the Test Kitchen:
Irish coffee... only more wonderfully sinful! The fudge turned out remarkably smooth and creamy - We can't wait to make it again!


3/4 c
margarine or butter
3 c
1/2 - 3/4 c
evaporated milk
1/3 c
bailey's irish cream
1 Tbsp
instant coffee crystals
7 oz
jar marshmallow cream
1 pkg
vanilla morsels or butterscotch chips
1 tsp
vanilla extract

Directions Step-By-Step

In a small bowl combine Bailey's and coffee crystals. Microwave on high for 10 seconds. or until melted and dissolved
In a medium saucepan, over medium heat, melt butter,evaporated milk, sugar and marshmallow cream. Slowly add the Bailey's coffee mixture; stir well. Boil for 5 mins.
Remove from heat and stir in chips and vanilla extract. Stir for approx. 3-4 mins. until smooth. Pour into a foil lined 8x8" pan. Chill to set.

Heather I made this fudge recipe today and I have to say I would rate this as a ten star. It is sooo delicious. I will definitely make this one and your other Irish Cream fudge that by the way when I took it in to my doctor's office everyone thoroughly loved it. It was a real winner. Thanks again for sharing this recipe. Pinched

This recipe is really a dream. I had two pans of fudge (I dont have a 10X15 pan) so I gave one pan 13X9 " pan of fudge to the staff at my doctor's office long with the recipe. I kept the other smaller pan for my husband and myself. I'm really sorry some people had trouble maybe they didn't follow the directions to a tee. I had no problem with this recipe mine turned out perfect.
Thanks so much for posting this recipe. I just love fudge and look forward to make your other fudge recipe as well. I will definiately be making this recipe again and again.

Thanks for the super kind remarks. I have had some real nasty grams from people about it not turning out. Every time I make it it turns out fine and I follow this recipe.
Yes you should be able to cut this recipe in half.

I have a question. My grandson (21 years old) is in college and He enjoys the 'care' packages I send him with goodies in it. I'm guessing Heather, that since everyone is saying the fudge has to be refrigerated, it wouldn't do well in a package that will be sent to Reno, NV? I know this would be a real winner in my fudge lovin grandson's eyes!
