Ingredients
- 8 oz packages cream cheese, low-fat, room temperature
- 1/8 cup sugar
- 1 teaspoon pure vanilla extract
- 3 cups vanilla bean frozen yogurt or ice cream, low fat
- 1 - 12 oz jars sugar free seedless strawberry jam
- 1/2 cup coconut, flaked

Step 1Line a small baking she with parchment paper or silpat liner & put into freezer.

Step 2STRAWBERRY CHEESECAKE FROZEN YOGURT: Into a food processor, add cream cheese, sugar & extract; process until smooth. Scoop vanilla yogurt & jam evenly over top; process until creamy, about 1 - 2 minutes. Scrape mixture into a metal bowl & freeze until firm, 5 hours.

Step 3Place coconut in a small bowl. Remove prepared baking sheet from freezer. Scoop 12 scoops of frozen yogurt onto frozen sheet using a medium cookie or ice cream scooper; return to freezer. Working with one at a time, take each scoop & coat with coconut & return to frozen sheet.

Step 4Freeze truffles until firm, at least 2 hours.

Step 5TO SERVE: Let truffles soften slightly at room temperature before serving, 8 - 10 minutes.
