val's StoryI made this for my family and my 17 year old daughter and my 53 year brother in law wrote down the recipe to keep. My brother law ate most of the first pan. My daughter has never asked for a recipe before. I had to tweak this recipe a lot to make it vegan.
vegan butter, softened i used earthbalance
banana (ripe) about 1 cup
almond milk - plus 2 tsps cider vinegar
all purpose flour
pears (ripe) diced or 2 diced apples
CINNAMON SUGAR TOPPING
1Preheat oven to 350 degrees
Grease 2 bread loaf pans
2Cream together butter, 2 cups of sugar, 1 medium ripe banana. Add almond milk with vinegar, flour, and baking soda. Fold in 2 diced pears or you could use apples too.
3Pour batter into two greased loaf pans. I used pampered chef stoneware bread pans.
4mix together in separate bowl 1 cup sugar and 2 teaspoons real cinnamon and sprinkle over the batter of both pans. swirl some into batter with knife
5Bake @ 350 degrees for 45-55 minutes or test with a toothpick - comes out clean.
Cool in pan for 25 minutes.

what is this(vegan butter)? where do you find Almond Milk?

The vegan butter I buy is made from olive oil with no animal products. You can use regular butter or margarine if you not a vegan. Almond milk is usually found in the juice section in any grocery store. :)
