Ingredients For triple ginger pound cake

  • 2 3/4 c sugar
  • 1 1/4 c butter or margarine,softened
  • 1 t. grated fresh ginger root
  • 1 t. vanilla
  • 5 eggs
  • 3 c all purpose flour
  • 2 t. ground ginger
  • 1 t. baking powder
  • 1/4 t. salt
  • 1 c milk
  • 1/2 c finely chopped crystalized ginger
  • PINEAPPLE CREAM:
  • 2 c heavy whipping cream
  • 2 t. confectioner sugar
  • 20 oz can crushed pineapple,well drained

How To Make triple ginger pound cake

    Heat oven to 350. Grease and flour 12-cup tube pan or 2 9x5x3 inch loaf pans. Beat sugar,butter,ginger root,vanilla and eggs in a large bowl on low speed 30 seconds. Beat on high speed 5 minutes. Mix dry ingredients together. Beat into creamed mixture alternately with milk on low speed. Fold in crystallized ginger till evenly mixed. Spread in pan. Bake 1 hour 10 minutes. Cool 20 minutes. Remove from pan. Cool completely on wire rack. Serve with Pineapple Cream. Beat whipping cream and sugar on high speed in a chilled bowl till stiff. Fold in pineapple.
