Triple Ginger Pound Cake



My Mother in law shared this recipe with me,I have not made it personally but she makes it often to rave reviews.

pinch tips: How to Cream Butter & Sugar




2 3/4 c sugar
1 1/4 c butter or margarine,softened
1 t. grated fresh ginger root
1 t. vanilla
5 eggs
3 c all purpose flour
2 t. ground ginger
1 t. baking powder
1/4 t. salt
1 c milk
1/2 c finely chopped crystalized ginger


2 c heavy whipping cream
2 t. confectioner sugar
20 oz can crushed pineapple,well drained

Directions Step-By-Step

Heat oven to 350.
Grease and flour 12-cup tube pan or 2 9x5x3 inch loaf pans.
Beat sugar,butter,ginger root,vanilla and eggs in a large bowl on low speed 30 seconds. Beat on high speed 5 minutes. Mix dry ingredients together. Beat into creamed mixture alternately with milk on low speed. Fold in crystallized ginger till evenly mixed. Spread in pan. Bake 1 hour 10 minutes. Cool 20 minutes. Remove from pan. Cool completely on wire rack.
Serve with Pineapple Cream.
Beat whipping cream and sugar on high speed in a chilled bowl till stiff. Fold in pineapple.
