This recipe came from a friend I worked with.Everyone brought in a favorite recipie and we made a cookbook out of them. Some of them were excellent, this is one that eveyone loved.

Ingredients

2 c
all purpose flour
2 tsp
baking soda
2 Tbsp
cinnamon
1/2 tsp
salt
3 large
eggs
3/4 c
vegetable oil
3/4 c
buttermilk
2 c
sugar
2 tsp
vanilla
1 can(s)
8 oz crushed pineapple, drained
1/4 c
raisins
2 c
carrots, grated
1 c
coconut, shredded
1 c
walnuts, chopped

CREAM CHEESE FROSTING

1/4 lb
butter, softened
2 pkg
8 oz. each, cream cheese, softened
2 tsp
vanilla
1 to 2 c
confectioners' sugar (add to taste)

CREAM TOGETHER BUTTER AND CREAM CHEESE. ADD VANILLA AND SUGAR AND BEAT UNTIL A SMOOTH, SPREADABLE CONSISTENCY IS ACHIEVED.

Step-By-Step

1Grease and flour 9x13 cake pan.
2Preheat oven to 350 deg.
3Sift flour, soda, cinnamon and salt together and set aside.
4In large bowl: beat eggs then add oil, buttermilk, sugar and vanilla. Mix together.
5Add flour mixture, pineapple, carrots, coconut, walnuts and raisins. Stir well.
6Bake for 50 minutes or until done.
7Let cool then frost.
