1 box duncan hines white cake mix
1 c pina colada drink mix
1/4 c mayonnaise
3 lg eggs
2 c shredded coconut
2 can(s) vanilla frosting

This cake is in Memory of Thomas "Tom" Pitts who went to be with Lord on April 23, 2012. He was the son of my best friend Cindy. One of his favorite cakes was Coconut Cake. I put my twist of love while making it. We will miss him so much. Please pray for the family.

Preheat oven to 350F. Spray 2-9inch cake pans. In mixing bowl add first 4 ingredients. Mix according to directions on cake mix box. Bake for 25 minutes. Let cool for 10 minutes. Invert onto cooling rack. Frost & sprinkle coconut all around cake and on the top.

****Today instead of using can frosting, I will be Karla Everett's Butter Cream Frosting.

Kimi , this looks delicious and thank you for using my frosting on such a specially made cake. Coconut cake is also one of my favorites and I will be making this and thinking of Tommy as I enjoy his cake. :D

I loved that your frosting was so easy to make. I wasn't able to go to the memorial BBQ. I had such a bad migraine. I felt awful for not being there.
