Ingredients

2 3/4 c all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 3/4 c white sugar
1 c unsalted butter (2 sticks)
1 c canned sweetened cream of coconut (i use coco lopez)
4 large eggs (separated)
1 tsp real vanilla extract
1 c buttermilk
FROSTING
1/2 c unsalted butter (1 stick)
2 c powdered sugar
1 Tbsp cream of coconut
1 tsp real vanilla extract
FILLING
1 Tbsp cream of coconut (you should have some left over)
3/4 c marshmallow fluff
1 1/2 c powdered sugar
6 Tbsp unsalted butter
4 Tbsp heavy whipping cream
TOPPING
1/3 c sweetened coconut
1/2 c toasted sweetened coconut

Janet's Notes:

Everyone that has tried these end up eating more then one!
I sold them at our Farmers Market and couldn't bake enough.
One lady bought me out completely! Another man bought one, started to walk away while eating his, then turned around and come back to buy more!

Directions

Preheat oven to 350 degrees
prepare your large cupcake pans with cupcake papers.

Get two small bowls and separate your eggs and set aside.

Whisk flour, baking powder, baking soda and 1/2 teaspoon salt in medium bowl to blend.

With your electric mixer, beat butter and sugar.
Add sweetened cream of coconut and mix until fluffy.
Beat egg yolks and vanilla extract then add to the mixture until blended.

On low speed, mix in dry ingredients and then buttermilk, each just until blended.
Using clean dry beaters, beat egg whites with pinch of salt in another large bowl until stiff but not dry. Fold beaten egg whites into batter.

Fill your cupcakes 2/3 full
bake for 25 - 30 minutes or until a tooth pick inserted comes out clean.

While they are cooling down, make your frosting, filling and toast your coconut, set aside.
(When mixing your frosting and filling you need to whip it until light and fluffy)

Hopefully you have a pastry bag, if not you can cut a tiny hole out of the middle and fill that up.

If using a pastry bag, put on a large tip and insert into the center of your cupcake about 1 inch.

Gently squeeze out filling pulling out at the same time.

Frost your cupcakes.
Mix your toasted coconut with the flaked and turn over the cupcakes on the coconut.

Decorate with a tiny dab of frosting on top!

tHEY MAKE YOU WANT TO JUMP INTO THE COMPUTER SCREEN. I simply must save these to bake also. Thanks so much for printing your step by step instructions. They are so thourough. You can almost make them just by looking at each picture. SMILE

Wow, you just may have given me a name for my cook book! "Janet's Lovin' from the Oven"...maybe. HA!
I think my best photo was for the fried chicken. So simple to make but it came through the screen! Makes me want to make it again. The secret on that is turning them often and cooking on a low heat.

Janet that name sounds great to me. smile. Are you considering writing a cookbook? I have written one, and am really ready to write a second one. Since I have created so many more recipes since the first book was written.

My book has 795 recipes in it. I have contributions from family members, it weighs almost 2 pounds, and the name of it is SHARING OUR FAVORITE RECIPES BY Rose Mary Mogan's Family & Friends. I did not include all of my own favorite recipes in the book because there was no room. In fact I had to remove some of the informational pages because the book was too thick to biiind together. I have some Family pictures included in the book, and also a bit of family History, as well as a section called MAMA'S RECIPES, it is a collection of recipes that my mother made during my child hood.

No I have not figured out the camera yet. Perhaps I will get my husband to help me figure it out. It would be great if we were neighbors, and we could have parties and invite friends and family all the time. I have always wanted to do that. smile. Thanks again for your compliments.
