THERE ISN'T A BETTER CARROT CAKE THAN THIS. MY MOM'S CARROT CAKE RECIPE IS THE BEST. YOU WILL NEVER WANT ANOTHER CARROT CAKE AFTER THIS ONE.

Ingredients

eggs
1 tsp
vanilla extract
1 3/4 c
sugar
1 c
vegetable oil
1 8 oz
can crushed pineapple drained (save juice and 1 tbs for topping)
2 c
all purpose flour
2 tsp
baking soda
1 tsp
baking powder
1 tsp
salt
2 tsp
cinnamon
1 c
raisins
2 c
shredded carrots
1 c
coconut
1 c
chopped walnuts ( save 1 tbs for topping)

CREAM CHEESE FROSTING

8 oz
cream cheese
1/2 c
butter
1 tsp
vanilla extract
2 lb
powdered sugar
reserved pineapple juice

Step-By-Step

1beat eggs, vanilla and sugar

2add oil and crushed pineapple

3add flour,baking soda, baking powder,salt cinnamon,raisins,shredded carrots, coconut, and walnuts.

4pour into 9x13 pan. bake 350 for 45 min. toothpick test.

5CREAM CHEASE FROSTING

6BEAT ROOM TEMP. CREAM CHEESE, BUTTER, VANILLA,AND POWDER SUGAR TOGETHER. ADD PINEAPPLE JUICE AS NEEDED WHILE BEATING. CAREFUL NOT TO ADD TO MUCH.
SPREAD OVER COOLED CAKE AND TOP WITH RESERVED PINEAPPLE AND WALNUTS
