1 tsp
vanilla extract
1 3/4 c
sugar
1 c
vegetable oil
1 8 oz
can crushed pineapple drained (save juice and 1 tbs for topping)
2 c
all purpose flour
2 tsp
baking soda
1 tsp
baking powder
1 tsp
salt
2 tsp
cinnamon
1 c
raisins
2 c
shredded carrots
1 c
coconut
1 c
chopped walnuts ( save 1 tbs for topping)

CREAM CHEESE FROSTING

8 oz
cream cheese
1/2 c
butter
1 tsp
vanilla extract
2 lb
powdered sugar
reserved pineapple juice

Directions Step-By-Step

beat eggs, vanilla and sugar

add oil and crushed pineapple

add flour,baking soda, baking powder,salt cinnamon,raisins,shredded carrots, coconut, and walnuts.

pour into 9x13 pan. bake 350 for 45 min. toothpick test.

CREAM CHEASE FROSTING

BEAT ROOM TEMP. CREAM CHEESE, BUTTER, VANILLA,AND POWDER SUGAR TOGETHER. ADD PINEAPPLE JUICE AS NEEDED WHILE BEATING. CAREFUL NOT TO ADD TO MUCH.
SPREAD OVER COOLED CAKE AND TOP WITH RESERVED PINEAPPLE AND WALNUTS
