My granddaughter just had a birthday and I asked what kind of cake she wanted. She said dark chocolate with coconut frosting. I looked around and really didn't care for what I was finding so this is what I came up with. My family really liked this.

Ingredients

1 box

FROSTING

8 oz
cream cheese
3 1/2 c
powdered sugar
4 Tbsp
coco lopez (found in the drink mixer section)
1 tsp
vanilla
1 c
coconut, shredded

CHOCOLATE GANACHE

1/2 c
whipping cream
1 c
semi sweet chocolate chips
1 tsp
vanilla

GARNISH

1/2 c
coconut, shredded

Step-By-Step

1Mix and bake the cake mix in 2 - 8" round pans according to the manufacturors directions. Remove from pans and cool.

2Beat softened cream cheese until fluffy. Add powdered sugar. Add vanilla and coco lopez and mix until creamy. Add coconut. Frost the cake with this coconut frosting.

3Heat the cream until almost boiling. Put the chocolate chips in a bowl and pour the heated cream over the chips. Beat with a whisk until smooth. Add vanilla and allow to cool slightly. This will begin to thicken a little. Pour over the frosted cake and allow to run over the sides. Garnish with the additional coconut.
