CAKE INGREDIENTS:
1 bx spice cake mix
2/3 c applesauce, unsweetened
1 can(s) comstock apple pie filling, (no high fructose corn syrup), diced very small
1 tsp ground cinnamon
2 lg eggs
2 lg egg whites
1/2 c vegetable oil
3/4 c walnuts, chopped fine
APPLE-CINNAMON GLAZE
1 can(s) apple pie filling (no high fructose corn syrup added), diced very small
1/3 c splenda, brown- sugar blend
5 Tbsp butter, melted
1 tsp ground cinnamon
OR JUST DUST LIGHTLY WITH POWDERED
SUGAR AND CINNAMON

penny's Notes:

Well, tonight I decided to make a SPICE CAKE. I am having company for lunch tomorrow and he really likes spice cake and apples...so I thought...I wonder If I can make a spice cake and incorperate apples some how...so I came up with this recipe. I just tasted a piece of my cake and it's very moist and tastes pretty good...so I'm shareing my recipe...happy baking!
(Oh, I tried to make this recipe as low-sugar and healthy as possible...)

 

Directions

PREHEAT: Oven to 350 degrees F.
SPRAY: Bundt pan or 9x13x2" cake pan with nonstick cooking spray, (Bakers' Joy) or grease and flour desired pan well.
Set aside.

MIX: All cake ingredients in large mixing bowl and mix with electric mixer for 2 minutes.
POUR: Batter in prepared pan.
BAKE: For 30-40 minutes. Cake is done when toothpick inserted in center of cake comes out clean.
(MEANWHILE: Prepare cake glaze.)
COOL: Cake on wire cooling rack for about 10 minutes.
INVERT: Cake on cake plate and glaze while still warm.
LET: Cake finish cooling and cover with cake cover.
SLICE: Cooled cake when ready to serve.
ENJOY!

APPLE-CINNAMON GLAZE:
COMBINE: All glaze ingredients in small sauce pan.
COOK: On "medium" heat setting until glaze comes to a boil, stirring continuously.
TURN: Heat to "low" setting and continue to simmer on "low" setting for 5-7 minutes more and continue to stir frequently.
REMOVE: From heat.
GLAZE: Slightly cooled cake.

Well, my lunch date loved my cake...asked for some to take home with him...I had made the cake especially for him...so I just sent the remainder of it home with him...he was a happy camper!

Really!...I figured I must have done pretty good or he really liked spice cake allot! LOL! He's really a nice man and good friend ... so I enjoy doing nice things for him too...
