Ingredients

CAKE:

1
egg
1/2 c
butter, melted
1 c
sugar
1/2 c
brown sugar, firmly packed
1 c
sour cream, fat-free
1 tsp
vanilla extract
2 c
all purpose flour
1 tsp
baking powder
1 pinch
salt
1 1/2 c
rhubarb, finely diced
1 qt
strawberries, fresh, cleaned, and sliced

TOPPING:

1/4 c
sugar
1/4 c
brown sugar, firmly packed
1/2 tsp
cinnamon
1/2 c
oatmeal, uncooked
1/2 c
butter, room temperature

Step-By-Step

1Beat egg, sugar, and melted butter. Add sour cream and vanilla and mix.
2Add flour, baking soda and salt. Beat together.
3Fold in rhubarb and strawberries. Pour into greased and floured 9 x 13 pan.
4Combine topping ingredients and sprinkle over top of cake.
5Bake at 350 degrees for 25 - 30 mins.
