I made this cake today for a family reuion and with the strawberry season coming I thought it would be a nice cake to take and something everyone else would not make. Also it is a pig-pick-in so I felt like we needed a fruit dessert. I found this in a cook book I bought from my sister-in-law when her church was having a fund raiser. It does not state where the cake originated so I don't know. Very easy cake to make and very good.

Ingredients

CAKE
1 box
white cake mix
1 box
strawberry jello
1 c
oil
1 c
fresh strawberries chopped and sweetend in juice
1 c
coconut
1/2 c
milk
4
eggs
1 c
chopped nuts
FROSTING
1 box
confectioners' sugar, i used 2 cups more and a little water
1 stick
butter =1/2 cup
3/4 c
chopped strawberries in sweented juice
1/2 c
chopped nuts
1/2 c
coconut

Directions Step-By-Step

Preheat the over 350
2-9" pans or 3-8" pans
Spray the pans with bakers joy

Mix all the cake ingredients together and pour in pans. Bake until done and let completely cool

Mix the frosting ingredients and ice the layers and cake.

Jamie, the cake looks quite delish, but I see the recipe calls for 1 box of Strawberry Jell-o. Is that a 3-oz. box, or a 6-oz. box?

oooh, I forgot to tell you, my Mom did not put the coconut in it because of my Dad. He had a hard time with his stomach when he ate coconut.

lol so funny Cindy but is does look good dont it. It got all but a small peice gone. My daughter said to make it again but please leave out the coconut
