Strawberry Coconut Tres Leches Cake

Easy as pie, because it uses a cake mix! You can easily substitute other fruits for the strawberries, including canned pie fillings. Sometimes it's easier to combine the three milks before pouring over the cake - as it seems to absorb easier. I left the recipe as written. In the past, my niece made it with a thin layer of apple pie filling and substituted a light sprinkling of cinnamon sugar for the coconut. Yum!

FOR THE CAKE:

1 box
yellow cake mix (15.25 oz)
1 3/4 c
sweetened condensed milk (14 oz)
1 1/2 c
evaporated milk (12 oz)
1/2 c
half and half, or whole milk

2 c
whipping cream
1/3 c
sugar
1 tsp
vanilla extract
2 c
fresh strawberries, sliced
1 c
sweetened coconut, toasted

Directions Step-By-Step

1
Prepare the yellow cake according to package directions in a 13-by-9-inch baking dish.
2
When cake is slightly cool, poke holes evenly over the surface with a toothpick or skewer. Pour each of the three milks slowly over the top. Allow each to absorb into the cake. Cover and refrigerate overnight.
3
In a medium bowl, whip the cream using a mixer. Slowly add in the sugar and vanilla. Set aside.
4
Layer the berries on top of the cake. Cover with whipped cream and sprinkle with coconut
