Strawberry cake from scratch

I thought this was the only cake that could be called birthday cake until I was about 6 yrs old! Easy and tasty. This is a densely textured cake. The timing for mixing the cake and frosting is essential. Real butter for the frosting is a must!

Ingredients

16 oz pkg
pre sweetened frozen strawberries (thawed drain and reserve juice)
2 c
all purpose flour
1 tsp
baking soda
1/2 tsp
salt
1 1/4 c
sugar
1/2 c
shortening
3 large
eggs
1/2 c
sour cream
1 tsp
vanilla extract

FROSTING

3 Tbsp
flour
1/2 c
shortening
1/2 c
butter
1 1/2 c
powdered sugar
1/2 c
reserved berry juice
1 tsp
vanilla extract
1 pinch
salt

Step-By-Step

1For Cake: preheat oven to 350 degrees bake time 30-40 minutes.
Grease and flour 2 nine inch round cake pans or one 9x13 sheet cake pan.

2Sift together flour, baking soda, sugar and salt. In lg mixing bowl add shortening, sour cream, eggs and vanilla. Beat on low speed 3 minutes then 3 minutes on medium speed, scrap bowl frequently.

3Fold in drained berries. Pour into prepared pans. bake 30-40 min or until done. (springs back when touched in middle or toothpick comes out clean)

4For frosting: Combine all ingredients in mixer bowl. Beat on medium - high speed 7-10 minutes or until desired consistency.
