| 1/2 tsp | unfalvored gelatin powder |
| 2 Tbsp | cold water |
| 1 c | whipping cream |
| 2 Tbsp | confectioners' sugar |

Directions
In bowl sprinkle gelatin over cold water. Scald 2 tablespoons of whipping cream and pour over gelatin. Stir until dissolved.Refrigerate about 15 minutes. Then whisk until smooth.Mix remaining cream, sugar and salt. Mix in smooth gelatin mixture stopping to scrape bowl twice.
(Fills and frosts top of 8 or 9 inch layer cake.)

I used to get this stuff from a 'Cake & Candy' store called, "Whip Cream Stabilizer". The family had made and decorated wedding cakes for some 50+ years, and went out of business in 2007. I haven't been able to find a good stabilizer since, even checking with my restaurant supply guys. Very frustrating. I will try this one.
