Simplified Lemonade Cake
|1 3oz pkg||lemon flavored jello|
|3/4 c||boiling water|
|1 bx||lemon cake mix|
|3/4 c||applesauce (plain)|
|2 Tbsp||softened butter or margarine|
|2 tsp||grated lemon zest|
|2 tsp||thawed lemonade concentrate|
|1/2 tsp||vanilla extract|
|8 oz||cream cheese (i use the 1/3 less fat)|
|3 1/2 c||powdered sugar|

DirectionsPreheat oven to 350 degrees.
Grease and flour a 10 inch bunt/tube pan.Cake:
Dissolve the lemon jello in boiling water and put aside. DO NOT allow to set.
Combine cake mix, vegetable oil and eggs. Beat until combined and add the liquid jello. Beat for 5 minutes on medium speed setting.
Pour batter into a prepared bunt pan and bake at 350 degrees for 1 hour.
Cool completely before removing from pan.Frosting:
In a large bowl, beat butter, lemon, lemonade concentrate, vanilla and cream cheese on high speed until fluffy. Add powdered sugar and beat at low speed until blended.
Chill 1 hour before icing cake.Sometimes instead of using the icing on the cake I dust it with powdered sugar instead.
