Alicia's Story

Although I love the recipe I got from a relative for a "from scratch" lemonade cake, I don't always have the time or patience.

This is just as yummy, very lemony and takes much less effort to put out.

Perfect for lemon lovers!

1 3oz pkg
lemon flavored jello
3/4 c
boiling water
1 box
lemon cake mix
3/4 c
applesauce (plain)
2 Tbsp
softened butter or margarine
Find more recipes at
2 tsp
grated lemon zest
2 tsp
thawed lemonade concentrate
1/2 tsp
vanilla extract
8 oz
cream cheese (i use the 1/3 less fat)
3 1/2 c
powdered sugar

Directions Step-By-Step

Preheat oven to 350 degrees.

Grease and flour a 10 inch bunt/tube pan.

Dissolve the lemon jello in boiling water and put aside. DO NOT allow to set.

Combine cake mix, vegetable oil and eggs. Beat until combined and add the liquid jello. Beat for 5 minutes on medium speed setting.

Pour batter into a prepared bunt pan and bake at 350 degrees for 1 hour.

Cool completely before removing from pan.

In a large bowl, beat butter, lemon, lemonade concentrate, vanilla and cream cheese on high speed until fluffy. Add powdered sugar and beat at low speed until blended.

Chill 1 hour before icing cake.
Sometimes instead of using the icing on the cake I dust it with powdered sugar instead.

Alicia...I have 2-way to make it, the first one is ofcourse easier and very few ingredients, (both are excellent).

    Lemonade Kool-Aid Pie

    1 envelope Lemonade Kool Aid
1 can (14 oz) Eagle Brand sweet condensed milk
    8 oz tub Cool Whip
    1 (9-inch) ready-made graham cracker piecrust

Fold in Kool Aid with the sweetened condensed milk; then fold in the tub of Cool
Whip. Put in graham cracker crust. Chill several hours.
    Lemonade Pie

TIP: For a homemade look, freeze crust for five minutes, and then it's easy to slip it into your favorite pie plate before adding filling.

    YIELD: 8 servings
    PREP TIME: 15 Minutes
    CHILL: 8 Hours

    1 (12-oz.) can evaporated milk
2 (3.4-oz.) packages lemon instant pudding mix
    1 tablespoon lemon zest
2 (8-oz.) packages cream cheese, softened
    1/2 teaspoon vanilla extract
1 (12-oz.) can frozen lemonade concentrate, thawed
    1 (9-inch) ready-made graham cracker piecrust
    Thawed frozen whipped topping
    Garnish: crushed lemon drop candies

Whisk together evaporated milk and next 2 ingredients in a bowl 2 minutes or until mixture is thickened.

Beat cream cheese and vanilla at medium speed with an electric mixer until fluffy. Add lemonade concentrate, beating until smooth; add milk mixture, and beat until blended. Pour into crust. Cover and chill 8 hours or until firm.
Dollop each slice with whipped topping. Garnish, if desired.
