What a moist cake! The addition of coffee is unusual but enhances the flavors lovely. Bring this to your next potluck, and you'll be the hit of the party.

Ingredients

2 c
sugar
1 c
margarine
1 c
black coffee
3 to 4 c
fine cut rhubarb (about size of little fingernail)
2 large
eggs
1 c
flour
1/2 tsp
salt
2 tsp
baking soda
2 tsp
cinnamon

TOPPING

1/3 c
sugar
1 small
pkg chopped nuts

Step-By-Step

1Cream together sugar, margarine, black coffee and rhubarb. Add 2 large eggs.

2Sift flour, salt, baking soda and cinnamon. Combine with creamed ingredients. Pour into greased 13x9 baking dish.

3Combine sugar and chopped nuts. Sprinkle topping over cake mixture.

4Bake 350 for 45- 55 mins.
